Don't make cookies complicated!
I've seen so many cookie recipes where you have so much extra work to do -
what you have to do for the butter, how to add the sugar strategically, letting your cookies sit formed for 48 hours, yaddy yadda yah...
It can be a lot of work to make cookies with some peoples recipes, which doesn't really help you when you're craving something sweet, quick snack in the oven with what you have at home.
I've found a way to make cookies very simple, fast and easy using whole foods.
These cookies are nutritious, satiating, delicious and will have you asking - why did I ever complicate cookies??
Let's get into it...
Raspberry & Coconut Cookies Dipped in Chocolate
Serves 12
Ingredients
Instructions
- Defrost Raspberries
- Preheat the oven to 350°F
- Add Coconut Shreds, Oat Flour, Maple Syrup, Frozen Raspberries to a bowl and mix thoroughly.
- Line a baking tray with parchment paper.
- Take spoons of the Coconut Raspberry Mixture and shape them into small mounds and pace them on the baking tray.
- Make 11 medium of 15-20 small mounds.
- Bake for 10-15 minutes and let them cool. They are ready when the bottom starts to brown.
- Melt the Dark Chocolate in a double boil method while the Coconut Raspberry Energy Mounds are baking.
- Dip the bottom of each Mounds in the melted Dark Chocolate and add a drizzle on the top.
- Optional: garnish the top with coconut shreds, nuts or seeds.
- Let sit in the fridge until the chocolate cools.
